Vural is the director of the Food Research Center at Hacettepe University. He has 20 years of experience in applied research related to several aspects of food science, technology, and engineering. He currently deals with waste utilisation and by-product valorisation, minimal processing and product stabilisation by new technologies, and development of computer vision techniques to monitor food quality for better inspection of raw and processed foods. Prof. Gökmen is the author of more than 120 scientific papers in peer reviewed international journals, and has an h-index of 25.
